Chef Jaime Hernandez is a San Antonio-based chef who’s revolutionizing the traditional taco truck model. At his new mobile eatery, La Fonda de Jaime 2.0, he’s committed to doing things differently. For example, their pork is marinated with apple cider vinegar that is made in-house and all of his salsas and cremas are created from scratch. It’s a lot of extra work, but it makes all the difference.
